My hubby’s request for dinner: fish and rice. I think we needed something light. We spent the last couple of nights dining out.
I love the “French in a Flash” column on Serious Eats. Kerry Saretsky has great ideas for simple, elegant dishes.
So – I decided to try out her mustard salmon and asparagus recipe.
I loved the flavor combination of white wine, mustard and crème fraîche.
The foil and parchment packets made kitchen clean-up a breeze. The recipe said bake the fish packets for 12 minutes. That left some of our fillets a wee bit under cooked. I think I should have left them in the oven for a few minutes longer.
We also enjoyed Asian stir-fried spinach by Top Chef’s Paul Qui.
I had no idea that you could pair fish sauce and coconut milk!
